Onion Confit with Yuzu


Yuzu is a Japanese citrus fruit whose flavor is somewhere between lime, lemon and tangerine. In terms of looks, too: young yuzu is green, then it turns orange and a ripe fruit is yellow. The taste is enormously aromatic and a lot less sharp than that of a lemon, for example. The taste has also something sweet, so it's not surprising that many chefs have embraced its juice.

Didden has made it into a confit that makes the many dishes for which it can be used, even more exclusive.
